White Bean Pesto Pasta

Ingredients
15 ounce can of great northern beans drained and rinsed
10 oz Three Farm Daughters Linguine Pasta
2 cups fresh basil
½ cup grated parmesan cheese
¼ cup toasted pine nuts
1 clove garlic
1 lemon juiced
½ cup hot vegetable stock or hot water
Sundried tomatoes
Fresh basil
Shaved parmesan
For Garnish
Directions
Fill large pot with water and generously salt, bring to boil and add pasta noodles and cook until tender.
While pasta is cooking add white beans, basil, parmesan, pine nuts, garlic clove and lemon juice to a food processor.
Blend until combined and then stream in stock or water until creamy and smooth.
Salt and pepper to taste and scrape down sides of food processor, blend one last time.
Drain cooked pasta and return to pot.
Top with white bean pesto sauce and toss to coat.
Plate and garnish with sundried tomatoes, fresh basil and shaved parmesan. Enjoy!
