Mascarpone & Lemon Pasta

One Box Three Farm Daughters Penne
Salt (for water)
1/2 Lemon, Squeezed (about 2 tbsp)
Parsley for topping
Cook pasta according to back of box. Salt the boiling water like the sea! This provides a lot of flavor for the pasta.
Strain pasta, and reserve 1/4 cup pasta water.
Place pasta back on stovetop and stir in mascarpone cheese and lemon juice.
Stir until cheese is melted and everything combined. Add a tbsp of pasta water until desired thickness has been achieved.
Sprinkle parsley on top to serve. Enjoy!
